Wheels of cheese cool on racks before being sealed in wax.

Magaly Lopez (above/below) stacks the wheels and then applies additional wax to make sure the cheese is completely sealed. 
(Below) The wheels are placed in boxes for sale in Ashe County Cheese's retail store.
